Pricing
$9.14/lb of grass fed, grass finished, pasture raised beef.
When pricing a Payne Ranch Steer, there are various aspects to take into consideration as well as many terms to be defined.
Steers are ready for harvest when they reach a Live Weight of 1200-1400 lbs. Payne Ranch charges the final cost based on Rail, or Hanging Weight.
Live Weight - The general weight of the animal while alive. Typically inaccurate due to movement on the scale.
Rail / Hanging Weight - Final weight of the steer determined by hanging still. Typically 60% of the Live Weight.
After going through the meat processor, the Take-Home Meat will be 60% of the Rail / Hanging Weight.
Of the resulting Take-Home Meat, percentages of cuts are as follows:
Ground Beef - 50%
Roasts - 30%
Steaks - 20%
For our Fall 2024 harvest, we expect our live steers to weigh in at around 1200 pounds, with a hanging weight of 720 pounds.
For a whole steer, you can expect to make a total investment of about $3,920 for 396 to 468 pounds of meat. This comes to about $9.14 per pound of grass-fed, grass-finished beef.
For half a steer, you can expect to make a total investment of about $2,060 for 198 to 234 pounds of meat. This comes to about $9.60 per pound of grass-fed, grass-finished beef.
